Roasted Purple Potatoes

  • 2 pounds purple potatoes
  • 1.5 tablespoons extra virgin olive oil
  • 3 fresh garlic cloves minced
  • 2 sprigs fresh rosemary leaves chopped
  • 3/4 tsp Kosher salt
  • Cracked black pepper a few turns

Instructions
 

  • Preheat your oven to 400 degrees F.
  • Spray your glass roasting pan or sheet pan with cooking spray or line a rimmed baking sheet with parchment paper.
  • Wash your purple potatoes. If using baby potatoes, slice in half. If using larger purple potatoes, cut into 1-inch pieces - 2-inch pieces.
  • There is no need to peel the potatoes. The skins are completely edible and in fact you want to leave them on to enjoy the crispy skin on the roasted potatoes.
  • Mince the garlic and chop the fresh herbs.
  • In a large bowl, toss the potatoes with the olive oil, fresh garlic, rosemary, kosher salt and cracked black pepper.
  • Spread potatoes in a single layer in your pan. This is important to ensure crispy, evenly cooked potatoes.
  • If your oven has a convection roasting option, I recommend using it at 400. Roasting the potatoes on a convection setting will leave the potatoes tender in the middle and crispy on the outside.
  • Place your potatoes in the preheated oven and roast for 25-30 minutes. Cooking time will depend on the size of the potatoes. You want them tender on the inside and crispy on the outside.
  • Set the timer to remind yourself to stir the potatoes once midway through cooking. This will loosen them up from the bottom of the pan and ensure they get crispy on all sides.
