Ingredients
  

Strawberry Spinach Salad Ingredients:

  • 5 oz Fresh baby spinach
  • 1 cup Fresh strawberries hulled and chopped
  • 1/4 cup Fresh basil chopped and more for serving
  • 8 oz Burrata cheese
  • 1/4 cup Sliced or slivered almonds
  • Lemon zest from one lemon
  • Optional: Sunflower seeds

Balsamic Vinaigrette Dressing Ingredients:

  • 1 tbsp Extra virgin olive oil
  • 1.5 tbsp High quality balsamic vinegar strawberry balsamic if you can find it - I get mine here
  • 1.5 tbsp Lemon juice
  • 1 tsp Pure maple syrup or honey

Instructions
 

  • Divide the fresh baby spinach between two salad bowls.
  • Place one piece of burrata on top of each salad.
  • Hull and chop the ripe strawberries into small pieces and place in a medium bowl.
  • Chop the fresh basil and combine with the strawberries.
  • Now time to make the homemade balsamic dressing.
  • Whisk together the olive oil, strawberry balsamic vinegar, pure maple syrup (or honey) and lemon juice.
  • Pour the dressing over the strawberry-basil mixture and stir well to combine.
  • Spoon the balsamic strawberries over the spinach and burrata.
  • Top with sliced or slivered almonds. Zest a lemon over the top of each salad.
  • That's it - easy peasy lemon squeezy.
