While the average strawberry spinach salad recipe will call for feta cheese or goat cheese, this one uses burrata cheese with a special strawberry balsamic glaze drizzled over the burrata and mixed with the strawberries.

The combination of the sweet strawberries with the tangy balsamic dressing and the creamy burrata cheese is SO GOOD! There is nothing quite like a summer salad with fresh ingredients. Of course this is best enjoyed during the warmer months of strawberry season so you have fresh, sweet berries to use. However if you freeze some fresh strawberries you can enjoy this colorful salad any time of the year.

Recipe for Strawberry Spinach Salad with Burrata

Strawberry Spinach Salad Ingredients:

  • Fresh spinach
  • Fresh strawberries
  • Fresh basil
  • Burrata cheese
  • Sliced or slivered almonds
  • Lemon zest
  • Optional: Sunflower seeds

Balsamic Vinaigrette Dressing Ingredients:

  • Extra virgin olive oil
  • High quality balsamic vinegar, strawberry balsamic if you can find it – I get mine here
  • Pure maple syrup or honey
  • Lemon juice

Tools You’ll Need:

  • Whisk
  • Medium bowl
  • Lemon zester
  • Herb chopper or sharp knife

Directions:

Divide the fresh baby spinach between two salad bowls.

Place one piece of burrata on top of each salad.

Hull and chop the ripe strawberries into small pieces and place in a medium bowl.

Chop the fresh basil and combine with the strawberries.

Now it’s time to make the homemade balsamic vinaigrette dressing.

Whisk together the olive oil, strawberry balsamic vinegar, pure maple syrup (or honey) and lemon juice.

Pour the dressing over the strawberry-basil mixture and stir well to combine.

Spoon the balsamic strawberries over the spinach and burrata.

Top with sliced or slivered almonds. Zest a lemon over the top of each salad.

Burrata is a soft cow’s milk cheese that is formed into a ball. It has an outer layer of fresh mozzarella and an inside that is filled with fresh curd and rich, thick cream. It has a rich, buttery, creamy taste that is so fresh.

The texture of Burrata is slightly firm, yet silky smooth on the outside, with an inside that is filled with soft, delicate, creamy fresh curd-like cheese.

What to Serve With Strawberry Spinach Salad

I recommend serving this colorful salad with a crusty bread and a high quality dipping oil. The best wine pairing is a cold, crisp Sauvignon Blanc from the Marlborough region of New Zealand.

  • 8 oz Burrata cheese
  • 1/4 cup Sliced or slivered almonds
  • Lemon zest from one lemon
  • Optional: Sunflower seeds

Balsamic Vinaigrette Dressing Ingredients:

  • 1 tbsp Extra virgin olive oil
  • 1.5 tbsp High quality balsamic vinegar strawberry balsamic if you can find it – I get mine here
  • 1.5 tbsp Lemon juice
  • 1 tsp Pure maple syrup or honey
