This colorful, easy side dish of roasted purple potatoes will add vibrant color to your next meal.

If you frequently roast regular potatoes and would like to add a more unique potato side dish to your dinner rotation, try these roasted purple potatoes alongside your main course. Of all the purple potato recipes out there, this is an extremely easy recipe using only a few simple, fresh ingredients. It takes just a few minutes to prep and approximately 25-30 minutes to roast. I like to combine white potatoes with the purple potatoes to add lovely colors to your dinner table.

What are Purple Potatoes?

This root vegetable is a colorful, eye-catching and healthy change to your standard roasted potato recipe. Purple potatoes have almost a “nutty” flavor, tasting earthy and savory with the addition of fresh herbs.

Change up your potato routine and give this simple recipe a try.

Are there Health Benefits to Roasted Purple Potatoes?

In this modern era of keto and low-carb eating plans, starchy potatoes tend to get a bad rap. However, potatoes are a natural part of a clean-eating diet and these colorful tubers pack an extra punch of micronutrients.

According to Healthline, purple potatoes are highly nutritious and have many health benefits. This root vegetable is packed with many antioxidants and nutrients including copper, potassium, vitamin B6 and vitamin C.

Purple potatoes are thought to exert less of an effect on blood sugar levels than regular potatoes. Healthline reports, “While all potato varieties impact blood sugar levels because of their carbohydrate content, purple potatoes may exert less of an effect than other types due to their high concentration of polyphenol plant compounds.”

Where to Buy Purple Potatoes

Purple potatoes are a unique, specialty type of potato so local grocery stores may not carry them in their produce aisle. Your local farmer’s market may carry them or you can also purchase purple potatoes at many large grocery stores like Whole Foods or perhaps at a Trader Joe store.

What You’ll Need – Ingredient Checklist

  • 2 pounds purple potatoes
  • 1.5 tablespoons of extra virgin olive oil
  • 3 fresh garlic cloves, minced
  • 2 sprigs of fresh rosemary leaves, chopped
  • 3/4 tsp Kosher salt

Tools You’ll Need

Instructions

1. Preheat your oven to 400 degrees F.

2. Spray your roasting pan or sheet pan with cooking spray or line a rimmed baking sheet with parchment paper.

3. Wash your purple potatoes. If using baby potatoes, slice in half. If using larger purple potatoes, cut into 1-inch pieces – 2-inch pieces.

4. There is no need to peel the potatoes. The skins are completely edible and in fact you want to leave them on to enjoy the crispy skin on the roasted potatoes.

5. Mince the garlic and chop the fresh herbs.

6. In a large bowl, toss the potatoes with the olive oil, fresh garlic, rosemary, kosher salt and cracked black pepper.

7. Spread potatoes in a single layer in your pan. This is important to ensure crispy, evenly cooked potatoes.

8. If your oven has a convection roasting option, I recommend using it at 400. Roasting the potatoes on a convection setting will leave the potatoes tender in the middle and crispy on the outside.

9. Place your potatoes in the preheated oven and roast for 25-30 minutes. Cooking time will depend on the size of the potatoes. You want them tender on the inside and crispy on the outside.

10.Set the timer to remind yourself to stir the potatoes once midway through cooking. This will loosen them up from the bottom of the pan and ensure they get crispy on all sides.
