I’ve made this simple recipe for Baked Brie with Jam for many years of holiday celebrations and family gatherings. They are so delicious – your guests will rave over them. Better yet, they will only take you about 15 minutes of prep time and 18-20 minutes of cook time.

This brie recipe is perfect for the holiday season and for New Year’s celebrations. It is one of the easiest appetizers to make and include on your menu. This classic party appetizer is quick, easy and uses only four ingredients – three if you want to keep it really simple.

What You’ll Need – Ingredient Checklist

  • 1 package of frozen puff pastry dough (2 sheets)
  • 8 ounces brie cheese / brie wheel
  • Hot pepper jam
  • Chopped pecans

Other jam options for a variety of Baked Brie Bites

  • Raspberry preserves or raspberry jam
  • Sweet apricot jam or preserves
  • Strawberry preserves

You can experiment with different nuts (like walnuts or sliced almonds) and any variety of jam, creating an assortment of different combinations to serve your guests.

Instructions

  • Preheat your oven to 375 degrees f .
  • Defrost the puff pastry in the fridge ahead of time, or lay out on the countertop onto a lightly floured surface. Unroll the puff pastry sheets and let thaw.
  • Place the wedge of brie in the freezer for 10 minutes so it is nice and firm for cutting.
  • Roll out each sheet of puff pastry onto a lightly floured work surface and cut each sheet into 24 even squares.
  • Using a sharp knife, cut the brie cheese into small ¾ – inch cubes, enough for 48 brie pastry bites. You do not need to cut off the brie rind. It is completely edible and you will likely not even notice it’s there once the brie melts. It’s difficult to cut the rind without wasting a lot of cheese. However if you don’t prefer the rind, feel free to carefully slice it off.
  • Spray mini muffin pans with nonstick cooking spray.
  • Place the puff pastry squares into your mini muffin pans.
  • Place approximately 1 teaspoon of hot pepper jam into the middle of the puff pastry square on top of the brie. As a fun alternative, you can make a variety of different kinds of brie bites by using the above recommendations for different jams.
  • Place a brie cheese cube into each cup on top of the jam.
  • To avoid messes, place the mini muffin pans on top of a cookie sheet lined with parchment paper. That way if any jam or brie spills over, it will be easy to clean up and it won’t make your oven a mess.
  • Bake at 375 degrees for 18-20 minutes or until the puff pastry is lightly golden brown.

This is truly your classic party appetizer. With just a little time and minimal effort, you can serve a very elegant appetizer at your next gathering.

The brie bites will be crispy on the top, creamy and sweet in the middle, and soft on the bottom. You will love the combination of flavors and textures of the melted cheese, the crispy edges of the puff pastry, the crunch of the pecans, and the sweet and spicy hot pepper jam.

Plate the brie appetizer on a beautiful serving platter. To make it extra festive, use a mini sifter like this one, and shake a touch of powdered sugar over the top of the baked brie bites.

Store leftovers in an airtight container. They can be reheated and served later.

Important Tips

  • Be sure to spray the mini muffin pans and use a baking sheet lined with parchment paper underneath. This will allow for easy clean-up.
  • Place the brie in the freezer for 10-15 minutes before cutting. It will ensure easier slicing of the cheese. If the cheese is room temperature it will be too gooey and will not slice easily.

Kid Hacks

No kid hacks needed for this recipe, though some kids might find the hot pepper jam to be too spicy. My teenager loves the pepper jam version, but my younger kids love the sweeter versions. I always make a variety for different preferences.

My personal favorite jam is the hot pepper jelly. They are sweet and spicy and creamy – completely delicious!
